Who doesn’t like garlic bread? The only ones I know are Vampires? Or are they Draculas? I always get them mixed up. I wonder what will happen if I serve some to the zombies?? Oops..been watching too many zombie shows lately. Can’t help it, hubby is a big zombie fan. We’ve just finished season 1 of “The Strain” and currently hooked on “Z Nation” and just started one episode of “Constantine”. Anyhow, the classic garlic bread recipe consists of butter, garlic, salt and handful of chopped parsley. Since Halloween is just round the corner, I’ve decided to give it a little twist by adding in a couple more ingredients for that extra kick and color.
Ingredients:
1/2 cup (113 g) unsalted butter – soften at room temperature
1 head of garlic
1/3 cup (55 g) parmesan cheese – grated
2 tbsp Italian parsley – chopped finely
1 tsp red pepper flakes
Salt and pepper to taste
A loaf of baguette or ciabatta or your favorite bread
Serves 2 – 4

Preheat your oven at 200°C / 400°F. Cut off the top of the garlic. Put it on a aluminium foil and drizzle some olive oil and salt over it.
Bake in the oven for about 30 mins until soft.
Once it is cooled, take out the garlic from the skin. It should slide out easily. Use a fork to mash it into paste.
Mix together all the above ingredients (except parmesan cheese and bread, of course) and season with salt and pepper. Taste it and adjust accordingly.
Spread the desired amount on the bread and sprinkle parmesan cheese on top. Pop them into the oven toaster or on the grill and grill until golden brown.
